Why we measure this

Food is more than just energy

A bag has to tell you its protein, fat, fiber and moisture. It does not have to tell you the carbohydrate, and almost none of them do. That missing figure is usually the largest single thing in the bowl.

So we derive it: whatever is left once protein, fat, fiber, moisture and ash are accounted for. Then we do it for every food in the catalog, the same way, which is the only reason any of these numbers can be compared with each other.
